Many people misunderstand that decaf coffee is non-caffeine coffee. But this is wrong. Decaf coffee only contains a small part of caffeine. As the regulations of EU countries, coffee is considered as decaffeinated when it contains 0,1% for roasted coffee or 0,3% for instant coffee.

An 8-ounce cup of decaf coffee contains about 5 milligrams of caffeine, while a cup of drip coffee or a cup of espresso coffee with the same volume contains 40-180 milligrams of caffeine.

How to make decaffeinated coffee

how to make decaf coffee

The decaffeinated process requires both to create a healthy product and to keep its taste and aroma. The German Doctor Ludwig Roselius was the first to invent the decaffeinated technique without losing the original taste.

Nowadays, there are four basic methods of decaffeination which are the direct-solvent method, the indirect-solvent method, the Swiss water method and the carbon dioxide method. These four methods have based on four sections:

  • Steam the green beans with water to separate caffeine
  • Extracting caffeine from coffee beans
  • Pump steam to remove residual solvent if using solvent
  • Drying the decaffeinated coffee beans on a normal humidity

All these methods are related to the use of water and the solvents. Moreover, four methods are divided into two different categories that two of them related to chemical solvents and the two other methods are not.

The process of reducing Decaf coffee of Roselius using benzene, a compound known as carcinogenic, is no longer applied. Ethyl Acetate and Methylene Chloride, became the most common solvents, are safe to human health because they entirely disappear in the final product.

Direct-solvent method

Just as its name implies, in this decaffeinated way, Ethyl Acetate Solvent is used for unroasted coffee beans.

Firstly, the raw coffee beans are exposed to steam for about 30 minutes to open the pores in the particles for Ethyl Acetate to penetrate.

After this process, the beans are washed several times with solvent for about 10 hours until the caffeine is completely decomposing and washed away.

Finally, the beans are hot steamed again to remove the remaining solvent.

The indirect-solvent method

Unlike the direct way, the indirect-solvent method has never actually touched the beans. Instead, the unroasted coffee beans are soaked in hot water for several hours to separate the caffeine and most other flavor compounds. Caffeine water is poured into a tank to handle with solvent, usually Methylene chloride, to carefully refine caffeine, leaving only the coffee oils and other characterized compounds. Finally, we take decaffeinated water back into the coffee beans.

The Swiss water method

swiss water decaf methodAt first, we soak coffee beans soaked in hot water for several hours like indirect-solvent method. This method does not use any chemical solvents, just only water with the activated carbon filter. The result includes two tanks – a caffeine tank and a tank of coffee oils and characterized compounds.

At this time, the organic coffee beans removed the featured compounds and caffeine are revoked. And the saturated liquid is used for a new process. Because this liquid can only remove caffeine from green coffee beans in the new process and leave the coffee oils and characterized compounds into as the taste and aroma coffee should be. Swiss water method mostly used to decaffeinate organic coffee.

This method is environmentally friendly.

Carbon Dioxide method

Carbon Dioxide method created by Max Planck Institute Kurt Zosel is recently improved to produce the delicious decaf coffee. This process uses liquid of CO2 to regulate and carefully remove caffeine from unroasted coffee beans.

After soaking the beans in a solution of CO2, the solution is drained, transformed into a gaseous state and leaving caffeine. It is different from other methods that featured compounds have never been removed from the beans, and there is no use of toxic chemicals. However, due to high cost, this method is only applied to the big companies.

Final thoughts

With the development of coffee industry, decaf coffee satisfied the demands of millions of people in the world. It cannot deny the healthy benefits of both regular coffee and decaf coffee. However, there are always two sides of every question. So, you choose your favorite products and use them appropriately to have a healthier body and a happier life.
